This is my classic Everything Salad, if I can’t be bothered to cook, it’s my easy peasy go to dish. Fast food made healthy!
Place a handful of mixed leaves onto your plate and add sun dried tomatoes, artichoke hearts, mozzarella cheese, avocado, fresh cucumber and tomatoes and top with smoked mackerel fillets. I decorated mine with a balsamic reduction and cracked black pepper, the hot bread roll was for added indulgence. It took only 10-15 mins to prepare and needless to say, it was delicious. A damn site healthier than going to the drive thru!
